Cold: Heirloom Tomatoes, Creamy burrata, pickled figs, toasted walnuts, white balsamic vinaigrette.

Almost there: Smoked Idaho Trout, smashed fingerling potatoes, carrot purèe, chimichurri.

Crescendo: Double-Cut Ham Chop, sweet potato green apple hash, burnt honey gastrique, hazlenut granola.

Intermezzo: Cherry Basil Soda.

Sweet: Huckleberry almond Financier, bay leaf ice cream, roasted white chocolate, huckleberry syrup.
